Muscadet (Melon de Bourgogne)
The "Clos de la Févrie" is a cuvée made from very old vines planted on the best terroirs of the estate. The oldest vines were planted in 1922 on the Coteaux de la Sèvre. The shallow soils force the vine to draw its resources deeper, near the mother rock, made up of Gneiss and Orthogneiss (metamorphic rocks rich in minerals).
VINIFICATION AND AGEING: Direct pressing of the grapes. Drainage after 18 to 24 hours. Fermentation for 3 to 4 weeks with natural yeasts (temperature between 18 and 20 ° C). Batonnage 2 to 3 times before the end of the year then matured on lees for 11 to 13 months.
It is a Muscadet Sèvre-et-Maine-sur-Lie with a very powerful body, generous, extroverted in flavours. The finish with beautiful ripe bitterness and praline nuances is particularly promising.
